Here are some of my favorite / free recipes I'd like to share with you:
MIX THE FOLLOWING INGREDIENTS:
½ POUND TUNA - DICE IT INTO CUBES
DICE ½ AVOCADO – INTO LITTLE CUBES
MIX EQUAL AMOUNTS OF RICE VINEGAR (2 TBSPNS)
AND SOY SAUCE (JAPANESE)
CUT 3-4 STALKS OF GREEN ONION – SHALLOT
3 TBSPNS. - TOASTED SESAME SEEDS
SOME TOBASCO SAUCE (OR CHILE SAUCE)
COUPLE GOOD SQUIRTS OF LEMON
*CAN ALSO USE A TOUCH OF SESAME OIL (NOT NECESSARY)
That's it! Enjoy!.....ABSOLUTELY AMAZING & AWESOME!!!
Favorite Mayo-free Tuna Salad
MIX CANNED TUNA (flaked well) with a little of each of the following:
SUN DRIED TOMATOES
*If necessary, add a little Balsamic Vinegar to moisten
Favorite (and easy) Pesto Recipe
1 Cup firmly packed fresh basil leaves.
½ cup firm packed parsley sprigs w/stems removed.
½ cup grated parmesian or romano cheese
¼ cup pin nuts, walnuts or almonds
1 lg. Clove garlic quartered
¼ cup olive oil
4 oz. Pasta
In food processor, combine basil, parsley, cheese, nuts and ¼ teaspoon, salt. Pulse ‘til paste forms w/machine running slow. Gradually add oil and blend ‘til consistency of soft butter. Divide into 3 portions (about ¼ cup each) and place in airtight containers. Refrigerator for 1 or 2 days or freeze up to 1 month.
To thaw, serve 1 portion frozen pesto; cook pasta drain and toss w/pasta – serves 4.
***Don't forget the fresh grated cheese and pepper!
1 Can Creme Corn
1 Can Regular Corn w/Liquid
1 Stick of Butter
1 (8 1/2 ounce) Package Corn Muffin Mix
Preheat oven to 350. Mix together. Pour into an 8 inch square baking dish, lightly coated with cooking spray. Bake & mix more. Total Bake Time - 1/2 hour at 350.
*COOL DIPS...(too good to be true! Serve with Ritz Crackers or those little garlic-flavored, Italian baguette toasty, cracker, "thingees"!)

RECIPE: Buy the box and read the cover on the back! Easy eh? (And make sure you use 2 eggs, rather than 3!) *Don't forget to serve warm over Low-Fat Breyer's Vanilla Frozen Yogurt!!! Totally Delish!!!! If you bring these brownies to parties, I cannot begin to tell you how impressed & happy everyone will be! These are a GIANT CROWD-PLEASER so Make sure you bake enuf to go around or there could be problems!
